If Uma Nota brought Latin-Asian flair to Manila, Sabai brings in something quieter, rooted, and unapologetically Thai. Located beside its sister restaurant at Shangri-La The Fort, Bonifacio Global City, Sabai officially opened its doors over a convivial lunch launch on October 27, 2025, attended by the Ambassador of Thailand to the Philippines, Makawadee Sumitmor, members of the diplomatic corps, and the media.

Created by the team behind Uma Nota Manila — restaurateurs Alex Offe and Michael Needham — Sabai is helmed by Thai head chef Assavadathkamjorn Puwadol, whose background includes Michelin-starred kitchens. Together, they’ve crafted a menu that celebrates the country’s diverse regional flavors.

“Sabai” in Thai conveys a sense of comfort, ease, and well-being, all of which are reflected in the restaurant’s elegant yet inviting interiors — polished wood, warm lighting, and brass details that strike a balance between tropical sophistication and cozy intimacy. The main dining area seats 53 guests, complemented by a smaller dining room and three private rooms, two of which are equipped for karaoke — a playful nod to the Filipino love for celebration.

At the launch, guests savored crispy fermented pork, braised five-spice pork belly, spicy dry fish broth with bangus, and crispy catfish flake salad, ending on a sweet note with water chestnuts in coconut milk.

With Sabai, Manila gains not just another Thai restaurant but a dining destination that celebrates culture through comfort and connection — one flavorful, soulful bite at a time.
